First put the coconut cream with a little water, jalapeno’s and basil in a pot and let the heat sauté the mixture for a minute or two, on low heat. Then, add the onions & shallots and let them caramelize. Then, add the coconut milk & water add curry paste and let it begin to soften. Next, add the eggplant and carrots then the snow peas, cauliflower, water chestnuts and bamboo shoots. last add the broccoli & peppers cover and let remaining vegetables stand in their own steam for a few minutes.
